Method of preparation of Sev Bhaji:

Heat oil in a pan. Add chopped onion and fry till it turns golden. Now add ginger, garlic, and green chili and cook till it turns aromatic. Then add chopped tomatoes and cook well till the masala leaves oil. Now add turmeric, red chili powder, coriander powder, and salt. Fry for 1-2 minutes and then add water and make some gravy.

Cook the gravy on medium flame for 5-6 minutes. Let it cook. As soon as the gravy is ready, turn off the flame. Now pour the gravy in a serving bowl, add thick sev on top, and serve immediately. Sprinkle green coriander on top. Serve Sev Bhaji hot with Laccha Paratha, Butter Naan, Chapati, or plain rice.

Add the sev just before serving, or else it will become soft and dissolve in the gravy. If you want, you can also bring slight softness by adding sev in the gravy and cooking it for 1-2 minutes. If you like spicy food, then sprinkle some green chillies or chaat masala on top.
