Ingredients required to make Malai Chaap:
- Soya chaap (stick), 4-5 pieces
- Curd (hung curd or thick curd) 1/2 cup
- Fresh cream/malai 1/4 cup
- Ginger-garlic paste 1 tsp
- Green chili paste 1/2 tsp
- Black pepper powder 1/2 tsp
- Lemon juice 1 tsp
- Chaat masala 1/2 tsp
- Kasuri methi (crushed), 1/2 tsp
- Salt to taste.
- Butter or ghee for grilling/frying
- Coriander leaves and onions for garnishing
Method of preparation to make Malai Chaap:
Boil soya chaap in lightly salted water for 5-7 minutes. Then remove it from the water, cool it, and separate it with a wooden stick (if on a stick). Cut the chaap into pieces or slit them lightly with a knife so that the masala goes inside properly. Mix curd, cream, ginger-garlic paste, green chili paste, lemon juice, kasuri methi, black pepper, chaat masala, and salt in a bowl.
Now add the chaap to it, mix well, cover, and marinate in the fridge for at least 1 hour. Heat a tawa or pan and add some butter/ghee. Now Bake the marinated chop on low flame till it becomes golden and light brown on all sides. If you want, you can also bake it in the oven at 200°C for 15 minutes.
Sprinkle some chaat masala and green coriander on top. Serve hot with onion rings and green chutney. If you want to make the cream richer, you can also add some cashew paste or cheese. If you want, add some butter at the end before serving; the taste will double.
