Ingredients required to make mushroom masala:
- Mushrooms (chopped): 200 grams
- Onion (finely chopped): 2 medium
- Tomatoes (puree or paste): 2 medium
- Ginger-garlic paste, 1 teaspoon
- Green chili (chopped) 1-2
- Coriander powder, 1 teaspoon
- Red chili powder, 1/2 teaspoon
- Turmeric powder, 1/4 teaspoon
- Garam masala, 1/2 teaspoon
- Kasuri methi 1/2 teaspoon (crushed)
- Cream/Malai 2 tsp (optional)
- Coriander leaves for garnishing
- Oil/Ghee 2 tbsp
- Salt to taste.
Method of making mushroom masala:
Wash the mushrooms well and cut them into thick pieces. If you want, you can add a little salt and sauté the mushrooms for 2-3 minutes. Heat oil/ghee in a pan, then add onion and fry till golden. Now add ginger-garlic paste and green chilies and fry till the fragrance comes.
Now add tomato puree and cook till the oil separates. Then add turmeric, red chili, coriander powder, and salt, and mix well. Add chopped mushrooms and mix in the masala. Now cover and cook on low flame for 5-7 minutes.
Add garam masala, kasuri methi, and some water. (If adding malai or cream, then add now and mix.) Cook for 2 more minutes, then turn off the gas. Sprinkle green coriander on top and serve with hot paratha, roti, or rice. Serve. You can use curd instead of tomatoes. If you want thick gravy, then add some cashew paste or cream.
