Mutton Biryani Recipe:  Mutton biryani is a very good option for non-veg lovers. Essential ingredients for making Mutton Biryani:

  • Mutton 500 grams (with bones)
  • Curd 1 cup
  • Ginger-garlic paste 1 tablespoon
  • Red chili powder 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Salt according to taste
  • Lemon juice1 tablespoon
  • Basmati rice2 cups (soaked for 30 minutes)
  • Onion 3 finely chopped and fried (brown fried)
  • Tomatoes 2 finely chopped
  • Green chillies 2-3 (long chopped)
  • Coriander and mint leaves 1/2cup (chopped)
  • Milk 1/4cup (soaked with saffron)
  • Desi ghee 2tbsp
  • Oil 2tbsp
  • Garam masala 1tsp
  • Bay leaf 1piece
  • Cinnamon 1piece
  • Green cardamom 3 piece
  • Cloves 3-4 piece
  • Nutmeg and mace pinch each.

Method to make Mutton Biryani:

Marinate mutton in curd, lemon juice, ginger-garlic paste, turmeric, salt, and red chili powder, and keep it in the fridge for 2–3 hours or overnight. Boil water in a vessel, and add salt and whole garam masala. Now add soaked basmati rice and cook till 70%. Then strain and keep aside. Heat oil and ghee in a pan. Add onion, tomato, and green chili to it.

Now add marinated mutton and cover and cook on low flame for 30-40 minutes till the mutton melts. Keep stirring in between, and you can add some water. First of all, put a layer of mutton in a heavy-bottomed vessel. Put some mint-coriander, brown onion, and rice on it. Put 2-3 layers in the same way.

Pour saffron milk and desi ghee on top. Close the lid of the vessel tightly (seal with flour if you want). Keep on low flame for 20-25 minutes. Turn off the gas and open after 10 minutes. Serve mutton biryani hot with raita, salad, chili pickle, and onion slices.
