What ingredients are required to make mutton chaap?
Essential ingredients to make mutton chaap:
- Mutton chaap piece (rib or chaap part) 500 grams
- Curd 1 cup
- Ginger-garlic paste 1.5 tablespoons
- Onion 2 (make a fine paste or fry it brown)
- Cashews 10-12 (for making paste)
- Poppy seeds 1tbsp (soaked and ground)
- Red chili powder 1tsp
- Turmeric 1/2 tsp
- Coriander powder—1tsp
- Garam masala—1/2tsp
- Salt—to taste
- Lemon juice—1tbsp
- Ghee or oil—2-3 tbsp
- Kewda jal/rose water—few drops (optional)
Method to make mutton chaap:
Wash the mutton chaap thoroughly. Mix curd, ginger-garlic paste, onion paste, cashew paste, poppy seed paste, lemon juice, turmeric, chili powder, coriander powder, and salt in a bowl. Add the mutton chaap and mix well. Marinate it for at least 4–5 hours or overnight in the fridge. Heat ghee or oil in a heavy-bottomed pan. Add the marinated mutton and cook for 5 minutes on high flame. Now cover and cook on low flame till the mutton is completely cooked (about 40–45 minutes). Keep stirring in between. If needed, you can add some water. When the mutton is cooked and the masala starts leaving oil, then increase the flame and fry it. Finally, you can add some kewra water or rose water for taste and aroma. Serve Mutton Chaap with Rumali Roti, Tandoori Roti, or Paratha. Serve with onion slices, lemon, and green chutney.
