Essential ingredients for making Gulab Jamun:
- Mawa (Khoya)—1 cup (200 grams)
- Refined flour—2 tablespoons
- Baking soda—1 pinch
- Milk—as per requirement (for kneading)
- Ghee/oil—for frying
- Sugar—1.5 cups
- Water—1.5 cups
- Cardamom powder – 1/2 tsp
- Saffron threads—a few (optional)
- Rose water—1/2tsp (optional)
- Lemon juice—1/2tsp
Method of making Gulab Jamun:
Boil sugar and water in a pan. Add cardamom powder, saffron, and rose water to it. When a slightly sticky (1 string) syrup is formed, turn off the gas and add lemon juice. Mix mawa, maida, and baking soda in a vessel. Knead soft dough by adding milk little by little.
Make small, crack-free balls from the dough.Heat ghee or oil in a pan (medium hot). Fry gulab jamun on low flame till it becomes golden brown. Put hot jamun in hot syrup and soak for 2-3 hours. While frying the jamun, keep the flame low so that it gets cooked inside. If the mawa is very hard, mash it a little.
The syrup should not be very thin; it should be slightly thick.
