Ingredients required to make Mutton Chusta:
- Mutton (with bone)—500 grams
- Curd—1/2 cup
- Ginger-garlic paste—1tbsp
- Lemon juice—1tbsp
- Red chili powder—1tsp
- Turmeric – 1/2 tsp
- Salt—to taste
- Onion—2finely chopped
- Tomatoes—2pureed or finely chopped
- Green chili—2finely chopped
- Whole garam masala (bay leaf, cloves, cinnamon, black cardamom)—1 tsp
- Cumin seeds—1/2tsp
- Coriander powder—1tsp
- Garam masala—1/2tsp
- Kasuri methi—1tsp
- Cashew paste—2tbsp (optional—for richness)
- Malai or fresh cream—2tbsp
- Oil—4-5 tbsp
- Coriander leaves—for garnish
Mutton Chusta recipe :
Marinate mutton in curd, ginger-garlic paste, turmeric, salt, Mix with red chili powder and lemon juice, cover, and keep for 1 hour (for more flavor, you can do it for 4-5 hours or overnight). Heat oil in a heavy-bottomed pan, and add whole garam masala and cumin seeds.
Now add chopped onions and fry till golden brown. Then add tomato puree and green chilies and fry the masala well. Now add coriander powder, cashew paste, kasuri methi, and salt. Fry till the masala leaves oil. Now add marinated mutton to the masala and fry on high flame for 10-15 minutes.
Then add 1 cup of water, cover, and cook the mutton on low flame for 40-45 minutes (or 3-4 whistles in a pressure cooker). When the mutton becomes soft, add garam masala and cream on top, and cook for 5 more minutes. Add chopped coriander leaves and serve with tandoori roti, lachha paratha, or jeera rice.
