Ingredients required to make Jackfruit Vegetable:
- Jackfruit (raw) – 500 grams (cut into small pieces)
- Mustard oil—4 tablespoons
- Bay leaf – 1
- Cumin seeds—1/2teaspoon
- Asafoetida—1pinch
- Onion—2finely chopped
- Tomatoes—2(make a paste)
- Ginger-garlic paste—1tablespoon
- Turmeric—1/2teaspoon
- Coriander powder—1teaspoon
- Red chili powder—1/2teaspoon
- Garam masala—1/2teaspoon
- Dry mango powder—1/2teaspoon
- Salt—as per taste
- Green coriander—for garnishing
Method of making Jackfruit Vegetable Recipe :
First of all, apply oil to the jackfruit and fry it lightly or boil it lightly by giving 1-2 whistles in a pressure cooker. (Keep it a little crisp.) Heat mustard oil in a pan and cook till smoke comes out. Add asafoetida, cumin seeds, and bay leaves to it.
Then add onion and fry till golden brown. Now add ginger-garlic paste and fry for a few seconds. Add tomato puree and turmeric, coriander, chili powder, and salt. Fry the spices well till it leaves oil. Now add boiled or fried jackfruit and mix it well with the spices. Cook on low flame for 7-10 minutes.
Then add garam masala and dry mango powder. Sprinkle green coriander on top, cover, and cook for 2 more minutes. Serve with hot roti, paratha, or jeera rice.
