  • Green chili (thick, less spicy) 100 grams (15–20 pieces)
  • Mustard oil, 2 tablespoons
  • Mustard seeds (mustard seeds), 1/2 teaspoon
  • Cumin seeds, 1/2 teaspoon
  • Asafoetida 1 pinch
  • Turmeric powder, 1/2 spoon
  • Fennel powder, 1 teaspoon
  • Amchur powder (or lemon juice), 1/2 teaspoon
  • Salt to taste.
  • Coriander powder, 1 teaspoon
  • Garam masala (optional): 1/4 teaspoon

Method of preparation to make Green Chili Vegetable :

Wash the green chilies thoroughly and dry them. Make a slit in the middle or cut them into 2 pieces (seeds can be removed for less spiciness). Heat mustard oil in a pan till it starts to smoke (cool the oil to medium). Now add mustard seeds, cumin seeds, and asafoetida to it. After crackling, add turmeric and coriander powder.

Now add green chilies and fry on low flame for 3-5 minutes. Then add fennel powder, salt, and dry mango powder and mix. If you want, sprinkle some water, cover, and cook for 2-3 minutes. Before turning off the gas, add garam masala (if you want) and mix.

Serve hot with paratha, roti, or dal-rice. Remove the seeds of very hot chilies. If you want, you can make it more tasty by adding roasted gram flour or peanut powder.
