Ingredients to make Vegetable Rice:

  • Basmati rice—1 cup (cooked or soaked for 30 minutes)
  • Carrot—1 (finely chopped)
  • Capsicum—1 (finely chopped)
  • Beans—8-10 (chopped)
  • Peas—1/2cup (frozen or boiled)
  • Onion – 1 (long chopped)
  • Ginger-garlic paste—1tsp
  • Green chili—1(chopped)
  • Oil or ghee—2tbsp
  • Cumin seeds—1/2tsp
  • Salt—as per taste
  • Black pepper powder—1/4tsp
  • Lemon juice—1tsp (optional)
  • Coriander leaves—for garnish

Method of making Vegetable Rice:

Heat oil in a wok or pan. Add cumin seeds, then add onion and green chili and fry lightly. Now add ginger-garlic paste and fry till it smells fragrant. Now add carrots, beans, peas, and capsicum. Add salt and black pepper, cover, and cook on low flame for 5-6 minutes.

Now add boiled or cooked rice to it. Mix gently so that you make sure the rice does not break. Fry on low flame for 2-3 minutes. Add lemon juice and chopped coriander on top. Serve hot. Serve vegetable rice with curd, papad, pickle, or raita.
